Affogato…. whoever came up with the concept is a genius. Take a scoop of ice cream and pour a fresh shot of espresso over it. Um, OK!!! I made some Madagascar vanilla bean ice cream for a Christmas party and have about 1/2 pint left. After lunch today I decided what better way to use some of that ice cream than to make an affogato? Delicious!

I was just finishing it I realized I also have a bottle of Bailey’s Irish Cream in the pantry. Damn it! lol Oh well, I guess there is always tomorrow’s dessert to consider, too!
